Things like Spanish rice, flour tortillas, and/or refried beans just to name a few. Is there some kind of web site that I can find this info out or does some one out there know?

Of all of my favorite cuisines that I have tried to adapt to a healthier lifestyle, Mexican has been the most difficult for me. There is no "one" good source (that I can find, anyway), but there are two places to go for ideas. One is a website that promotes "reverse dieting," which is simply the idea of eating your biggest meal at breakfast and your smallest meal at dinner. This site recently put up a number of "healthy version" Mexican dishes. It's a good site to know about anyway, so I've provided the web address below. The second source is the Hungry Girl website. This is a fun site to know about and generally promotes healthy food alternatives and lots of good ideas. You'll need to get on it and search around a little bit, but in the past they have published lots of lower-fat Mexican recipes.
Good luck. You'll probably have to take it recipe by recipe, but the recipes you do find will give you ideas for how to cut down on the calories in other recipes that you can't find but want to make.

There are many websites. All you need to do is find healthier substitutions for some of the recipes. There are some healthier flour tortillas in stores now. Refried beans are healthy anyway. Just make sure to look at the ingredients label. Some brands actually add lard. You may have to avoid some Mexican recipes that are loaded with fat and carbs. I don't know of any healthy substitutions for tamales for example. Unfortunately, tamales are one of my favorites. :(

P.S. Fish tacos might not sound that good but they are awesome! I finally got brave and tried one. Outstanding.
